Fish.



When I make some dishes for Christmas I double the amounts and freeze some for future dinners. One of them is veggies for fish that I make with potatoes. The only part that I freeze is the veggies, potatoes and fish is always made fresh.

1 cabbage, shredded
3 leeks, well cleaned and sliced thinly
5 carrots, shredded
1 celery root, shredded
1 can of tomato paste
Salt, pepper and few bay leaves,
Butter for frying.

With some butter fry all the veggies with the bay leaves until they get softer, add salt and pepper and tomato paste, mix well.

For the fish I always use Basa filets because they don’t make your house smell like fish.

Our pets.



We have two pets, a 4 year old cat name Max and 1 year old hamster name Bellatrix, both adopted from a shelter. Those who have cats know how much fun they are and how silly they get sometimes, with running fast wanting to be chased to climbing on everything possible to sleeping in weird positions. He loves tummy rubs and staring at the hamster, he doesn’t like to be picked up and doesn’t sit on our laps.





Bellatrix like any hamster sleeps all day and wakes up right before we go to bed so she gets some out of the cage time in the evening and then in the morning. She is very sweet loves apples and blueberries and nuts.


Now we are thinking about getting a kitten so Max has a friend to play because let’s face it we all get busy sometimes and can’t play with him right when he wants to.

Pizza.



We all love pizza and just recently started making my own. I always thought that making it at home would be hard and time consuming but I was wrong. I found this great and quick recipe, tried it couple times and love it.

3 cups of all-purpose flour
2tsp quick-rising(instant) dry yeast
1tsp salt
1 ¼ cups hot water
1 tbsp extra – virgin olive oil

In bowl combine 2 ¾ cups of flour, yeast and salt. With wooden spoon, gradually stir in water and oil until dough forms. Turn out onto lightly floured surface; knead adding as much of the remaining flour. Place in greased bowl, turning to grease all over; cover with plastic wrap.
Let it rise in warm place until doubled in bulk, about 1 hour.
Roll the dough with rolling pin add all you want on your pizza, bake it in 425F for about 15 minutes or until the cheese is bubbly.

Saturday walk.



Saturday my husband went to work for extra hours and my older daughter went to her art school so I was alone with my little Ella. The day was so lovely, nice crisp sunny day, we decided to go for a walk to the lake, it was really nice, we fed some ducks and took some pictures but most of all we enjoyed some time together.
